Bacon wrapped, stuffed, tenderloin
Similar to a fatty but a little more dinner related.
I like to take a tenderloin and fillet it out as flat as I can. Then stuff with goodies, roll it up and do a bacon weave on top then smoke it. They are amazing.

Smoked at 225 till it was about 160. Took a few hours or so.
