Default a dumb question

I have never smoked meats for long period of times in my otg 22.5. So i thought i would check it out. i have always used my uds, even though i have tried it in the uds and wsm style cooker with all lit charcoal, it is a we bit different.

i went to friends site and grabbed this page.

my dumb question is this. since all the charcoal is lit and burning, i assume that it will burn out in 2 hours so i can plan on replacing the charcoal every 2 hours, maybe less right?

I believe the general opinion is you can smoke anything on the kettle but it's not as set and forget as others methods. I'm confident I could turn out good brisket on my kettle but I'd only do it if I was in a pinch.

Edit: you can set up your charcoal so that you're actually using a version of the minion method

I can run my kettle at low and slow temps for quite a while using the standard weber charcoal baskets. I have run it for 8-9 hours before with no problem. I have several videos of that process... I cooked ribs one time and a boston butt on the kettle like this. I did not lite all the charcoal at once... I created a minion method burn in the baskets. There are lots of different ways documented on this site to do long low and slow burns on a weber kettle...

Thanos all for the info. I wanna try smoking in the weber kettle with no minion method. Haha. I know that sounds crazy but im testing something out for my blog. Just a fun expeirment. I imagine cooking non minion method in the kettle is the same as the ecb,.have to replace charcoal every hour or so? Haha. thanks guys. Ill watch the video when i have some internet available.
