Starting the smoke bright and early...Butts, chicken, and sausage on the menu.

Here are the butts...rubbed and injected and waiting for temp to come up:

More to come...

At the last minute, I remembered that I was going to do a test smoke for beef barbacoa:

Chuck rubbed with salt, then a chili sauce made from New Mexico, Chipotle, and Guajillo chiles, garlic, and onion.

Here's the full cook minus the Kielbasa:

A closeup of the barbacoa:

The event setup:

Nobody talks about it, but there is a lot of cleaning up to do afterwards...

We took in $1,400 in donations for an ala carte menu that included pulled pork, shredded chicken, sausage, slaw, beans, greens, and dessert.

Man, that barbacoa looks a lot like pulled pork. What type of cooker is that?

@Czarbecue-I use the A1 Competition Smoker from Custom Pits in Watkinsville, GA.
Day 2, I put some of the barbacoa on the griddle with a little ancho chili powder, scrambled a few eggs and put the mess in a tortilla with some homemade salsa.

@Titch: Relay for Life is a fundraising activity where cancer survivors and their caregivers and families are recognized for their efforts. Not sure if we extend that program to your part of the world, but here is the general page and description.
