Bring a cooler and ICE (or some blue ice blocks). If you're judging the Invitational you will get chicken that came off of the cooker at about 11:45 but you won't get done with the sides until about 4:00. That's a long time for any meat, let alone poultry.

I believe there is also beans, veggies, and sausage.

Last year (2012) the sides were:

Beans
Vegatable
Potatoes
Dessert

no sausage.
