Default Quick High Plains Latin Bird Shenanigans - w/ Pr0n

I discovered a great deal on whole chicken at the local Albertsons last Thursday. Distractors kept me from forming a full plan until this morning, but...

I fired up T. Mac's Latin Wings recipe/process.

I marinated the bird in Badia Mojo and Bitter Orange for most of the day before giving it a medium covering of Tajin.

I flipped the Vortex upside down in the middle of my 22.5 Kettle. No photos of this setup, but the hot coals went around the outside with the bird on one of those goofy "beer can chicken" holders (for stability).

Here's the results:





Lovely crisp skin with moist meat beneath.

The flavor didn't penetrate the meat like in a longer marinade (duh!), but it sure worked wonders on the skin and fat!

If you haven't played with this stuff before, I'd highly recommend it.

I temped it right at an hour. I think I could go about 70 min next time for just a little more crispy skin, but I really can't complain.

Dome temps were off the charts, but my IR gun said about 400-375 inside the upside-down Vortex.
