Default Concession stand?

Anybody have one? Have been putting alot of thought into doing this. Thinking pulled pork sandwiches (cooked off site) along with sausage on a stick (cooked on site) to bring in the smells and attraction. Potato chips/candy/drinks also. Would mainly do smaller community based events and travel less than 200 miles to do so.
So whats your thoughts?

I do it. A bunch. LOTS of work and cost. Be sure you include insurances, Health Department, vending fees and chance of inclement weather. If I didnt cater, id have quit long ago.

I'm with jbrink01. First step is to understand the local HD rules for festival vending. If you are able to create your HD compliant set-up without breaking the bank, you can take the next steps.
