Finally a nice weekend. After a few dry runs, I went all in on some ribs. The new cooker performed perfectly. Temps stayed between 220 and 235. Smooth as silk to operate. Truly was a day of firsts. First time using wood that I cut and seasoned (apple), first time smoking ribs on this cooker, first time hanging ribs, first time using my new "Smoke" thermometer. Greatest takeaway, I am blown away on how stable the temps stayed. I switched to stickburning last year but was using Home Depots bagged Hickory. I've turned out good stuff with that fuel but was always fighting temps. Overall, good day.
