I completely understand what you're saying. Hard to beat a good bowl of Pho for under $10. Going to take some time before I completely understand what I'm doing. Fun experience though.

It's not that bad. It's like saying brisket takes 15+ hours. Its not really 15 hours in front of a grill. Plus you can make extra and freeze for quicker meals. You can spread that time out over several meals.
