Flank Steak Pinwheel this past weekend

First time posting a picture(s) of something I've done on here. I have always weekly looked at all you fellow brethren and all your work. Great job to all of you! Thanks for all your inspiration, help, and ideas.

I decided to do a flank steak pinwheel for the first time this weekend. It turned out fantastic and was very, very easy to do.

Steps below:

1. Bought a flank steak from the butcher and had them butterfly it evenly for me
2. Seasoned it with some steak seasoning and all purpose seasoning.
3. Laid it flat and layered it with cream cheese, spinach, roasted red peppers, and mozzarella cheese
4. Rolled it up nice and tight into a log and used some butcher's twine to wrap it up tight.
5. Put my Traeger on high to get a little sear all around the outside (3-4 minutes per the four sides)
6. Put my temp probe in and let it sit at 350 degrees for about an hour (internal temp of 130)
7. Let it rest for 10-15 minutes
8. Was absolutely fantastic!

I used to cook these regularly, but it's been years since I have.

You inspired me to put this cook in queue.
