I must start off giving thanks to all the wonderful knowledge in this forum and all the great ideas for the UDS. This has been the first chance I have had to post since I finished the build earlier this past week. I was lucky enough that the wife was able to bring home a food grade drum from work that had palm oil in it!!

Starting the welding of the fire basket

Started seasoning with a few cheap cans of EVOO Cooking Spray

Cranked it up to 400* nice clean smoke with only the ball valve open

After 4 Hours @ 400*

Threw on a couple naked fatties one hot and one mild!!

After 2.5 hours @250* time to rest cant hardly wait!!

I cranked it back up to 400* and let the rest of the charcoal burn off for the rest of night. It ended up burning for over 15 hours from start till the temp started dipping below 200.

I'm overly joyed with the performance and the ease of use with the my new smoker!!!!

And so I started the day and continued the seasoning by waking up the drum with 16 lbs of kb and two layers of apple wood chunks!! Let that get up to temp while i prepped two 10 lbs pork shoulders with Lawry's, Butt Glitter, and some sea salt and coarse pepper!!

Every one loved the PP. It ways very tender and juice. We had a great dinner with the family!!
 
Congrats on the UDS- they're great cookers! Food all looks awesome too. Only thing I'd add is a handle on the lid and a 6" stack on the large bung. I think it helps fight the wind on those not-so-optimum BBQ days. Looks like you're off to a great start though!

Yeah I have a handle just trying to figure out if i want a lid hanger or not. If I install the hanger i want to use the same mounting holes as the handle. Also just got the bottle opener for it too!! :biggrin1:

Cool! A bottle opener is essential! A lid hanger is nice to have- you might be able to use the small bung hole to mount a J-hook on the underside with a bolt and a couple fender washers.

That could be a possibility. Also a 22.5 Weber grill just popped up on CL. It has been neglected but if he takes my $30 might have some other mods in the near future!!! :clap2:
 
Yeah made quick work for saucing and serving. Of course they only lasted 5 mins. Wish i had some more room on the grate to cook more. :becky:

You could add a second grate below your existing one. For the longest time I was convinced I didn't need one but after I added it I was very glad I did. It not only doubles the UDS's capacity, but also allows you to place a clay saucer under a finicky cut of meat to protect it from direct radiant heat. I add water to my clay saucer when cooking smaller beef roasts and it really helps retain moisture. I know these ain't water cookers but there's more than one way to skin a cat!

Expanded metal should be available at your local Home Depot or Lowes.

Thanks for the compliment it was a fun build!! I threw it together in about 4 hours.

I picked up the expanded metal at Metal Supermarkets for $11! :thumb: All on piece 10" high by 54" wide. That way it fit all the way around the charcoal grate for the 22.5 Weber kettle. But there isn't any close to Akron. Unless you travel to Fort Wayne IN, or Cincinnati OH.

But lowes and home depot both carry similar expanded metal.
