Shelf life of cooked brisket
I have two parties coming up - this weekend and next - two briskets each. Because of timing, I think the best thing to do is cook them all tomorrow and stick two in the refrigerator, then reheat next weekend. How long will cooked brisket stay good in the refrigerator? Is a week too long?

Yup, freeze it, then take it out when you are ready, thaw it, and reheat foiled in the oven.

To be honest with you, I think that's pushing it. I'd eat it myself if it smelled ok, but wouldn't serve it to others. I've had deli meat that lasted a week in a ziploc...but I really don't think it's safe for that long.

I'd vacu-suck, freeze, then re-heat in boiling water, works like a charm. A Food Saver type machine is a nessesity to me.
