Last night I found a 4 pound chuck roast thawing. Asked the wife what it was for. She said she was going to toss it in the crockpot for dinner tomorrow (tonight). I said, "Gee honey, you work so hard. Why don't you let me take care of dinner..." So instead I stopped home at lunch and tossed it on the 'ole AB smoker. Haven't used the flower pot in a while, but it seemed perfect for this application. Easy for me to setup and maintain a steady temp while I finish out the workday...I wonder how it's lookin' right about now...
Ready to go into the cooler to rest:
Chopped beef 'n swiss, with some homemade sweet & spicy pickles:
It was a little dry, as I couldn't get home fast enough [Shakes fist at the man]. Nothing a little saucing couldn't fix. The smoker held temp like a champ. Didn't budge a degree from where I left it. (Or maybe it fluctuated wildly and returned to 225º right as I got home.)
