Comp Chicken Test Cook (Pic)

I was shooting a how-to video for the Smokenator 1000 today and decided to do a comp chicken test cook...

Everything was as "standard" as it gets! Trim it. Yardbird it. Cook it. Honey & Blues Hog it. Not looking to work on a recipe, more looking to try and get as uniform a size and sheen as possible.

The most "in focus" piece had it's skin shrivel up on me a bit. Guessing I trimmed it too tight (not 100% sure what happened to it)?

Any thoughts or tips would be great!

This may not be helpful, but I hope at least it will be consoling... I would blame that particular piece of chicken. Sometimes, some things just go beyond our control. Scrumptious winner nonetheless!
 
Nice job! High appearance scores go to entries that you just can't wait to eat.
 
I'm sitting at a comp right now and I sure hope our chicken looks that purty when we put it in the box in about 6 hours!

The chicken was very good. Let a few pieces sit to test rubberyness (is that even a word?!) for comp. It held up well. Can't wait for June 1. That's the first comp I can fit in my schedule this season!
