Marinated, Seared, Smoked and Braised Boneless Pork Chops! (lottsa Pron)

I turned this piece of pork loin into some nice thick boneless chops and I wanted to do something a little different with them. This is what I came up with:

I made a marinade of 1/4 cup of olive oil, 1/4 cup of lime juice, 1 tablespoon of Worcestershire Sauce and 1 tablespoon of Mister Bob's Blue Ribbon Spice Rub.

After spending overnight in the refrigerator, this is what they looked like.

To get better grill marks, I move the cast iron grate from my Weber gasser to the 26" kettle. I think the results were excellent! I didn't want to cook them too long at this point, I only wanted to get the grill marks and a little sear.

Next I put one can of sauerkraut and one can of chicken broth in the bottom of a 6qt cast iron Dutch oven. I put the chops on top and put it on the cooker uncovered for one hour to soak up some smoke flavor.

Then I covered to pot and cooked it for another three hours at around 250 degrees.

They were 'fall apart' tender and delicious! Not a lot of the lime flavor came through, but it was there. That's grilled polenta on the plate. I'll show you how that was done in my next post! Enjoy!
 
Officially, my stomach just growled at me for looking at your post. Looks amazing and sounds tasty!
