Jul 29, 2015 #2 For ribs, plan 2 bone portions, 12 bones per rack, so 13 racks For pork, plan 1/4 lb portions cooked, or 1/2 lb raw, so 38 lbs. For the chicken, I plan on a piece per person so no one is disappointed, but I know that is overkill.
