Catering gig for 275

So I have been asked to bid for 275 folks with the following menu:

Pulled pork
Boneless skinless Chicken breast
Link sausage

Sides:
Chili beans
Green salad
Kernel corn
Dinner roll w\butter

So I am looking for suggestions on portions on meat and sides. Sides I'm figuring 4oz on beans and corn but not sure how to figure Salad. They requested to make sure meat doesn't run out and they don't mind paying for left overs. Any suggestions are appreciated.
 
Pulled pork 170lbs raw pork
Boneless skinless Chicken breast 50-60lbs
Link sausage 150-200 links (this is a guess as I don't do them)

Sides:
Chili beans 4oz
Green salad as a side and not a plate of salad we do 3lbs of iceberg lettuce, 2 bell peppers, 1 large red onion, 2 large cucumbers, 2-3 cups cherry tomatoes for 50 people as a side so X this by 5
Kernel corn 4oz
Dinner roll w\butter 300-350ct I'm thinking you will go through more dinner rolls. Again we don't do them but with buns or cornbread we use 1pp as a reference. I know I'd grab more dinner rolls myself than cornbread or buns. You may even want to go higher.
