Default Jamaican Jerk Bratwurst

Howdy...

Its getting warmer now that spring is close but that wasnt quite enough for me - so i made a small culinary trip to Jamaica

Cut a 5 pound pork butt into small strips and chilled it in the freezer

And made a Marinade out of this :

1/4 cup allspice
1/4 cup brown sugar
4 garlic cloves
4 Habanero peppers
1/2 Tablespoon Thyme
1 spring onion
1/2 teaspoon cinnamon
1/4 "--" nutmeg
5 "--" sea salt
3 "--" frisch gemahlener Pfeffer
Juce of 1 lime
1/4 cup EVOO
2 Tablespoon Soy Sauce

Ground the meat with the coarse blade, mixed it with the marinade and ground again with the medium blade

Then stuffed into 1" hog casings

I just cooked a couple of those on the mini egg with some allspice in the charcoal and im very pleased with the results. Flavour was awesome, next time ill just add some some more fat to the mix.

Too bad i didnt have any Rum at home, but a Gentleman Jack also did it.

So long,

DM

This really got my attention with just the title alone. Once I looked at what you did I had to add this to my must try list.

Thanks for sharing.

That looks real good, DM. Tell us about your use of allspice in the charcoal. Intriguing...
