For those curious, these were dusted with a base of Q-salt, followed by a little heavier coat of SM Pecan, and finished with a light dusting of Smoking Guns Hot. Cooked @ 225° on my MAK 2 Star with Lumberjack Supreme Blend (Oak, Cherry, Hickory) until they achieved the color I wanted. Pulled the ribs off, upped pit temp to 275°, wrapped ribs tight in foil with a little butter and Tiger Sauce until they hit the tenderness I wanted. Pulled the ribs, unwrapped, and brushed a very light coat of a custom sauce blend to my taste of Blues Hog Comp, Head Country, a little hot sauce and vinegar. Put them back on the pit until the sauce had set and called it good!
