Default what metal should I use?

Hi everyone,
I'm looking at the idea of building my own brick barbecue and smoker. I want to put some sort of hot plate on it to what metals can be used to cook on?

I would stick with plain steel. Maybe some others will chime in. 1/4" steel holds heat very well
