So the other day I posted in my build thread that I had test burned and seasoned my offset. Well, Saturday night some friends showed up with 6 racks of spares. So it got called upon to cook earlier than planned. Everything went great. Ran on red oak between 275 and 305 for the most part. Ribs were rubbed with Oakridge Secret Weapon and Dominator 50/50. 2.5hrs in the smoke, 1.25 hrs foiled and 20 min glazed unwrapped again. The glaze was Kinder's original mild thinned out and a little Oakridge HDD mixed in.

Nice friends, Nice cook, Nice time

They are pretty great friends. They come up four weekends during the winter to the camp where I live/work and always bring something to smoke. Then we share it with the rest of the staff and volunteers as a late night snack. He also provides me with 2-3 truck loads of wood for the stick burner each year. They are here for two months in the summer and bring something to cook every week.

That is the way to enjoy life, Friends and Ribs, dont get no better.

The same friends that supplied the ribs are bringing up a bed full of cherry, Asian pear and grape on Monday. Then on thursday a load of almond and 4 tri-tips. Gonna be a good week.

The bigger question now is which flavor of wood to start with:lol:

Pics for sure. I'll probably go with the Almond this weekend. I love it on tri-tip. But if it's not fully seasoned I'll go with whatever is. Once I get a few of the little odds and ends finished on the pit I'll post a walk around vid on the build thread.
