It's killing me right now.:mad:

I have talked with my supplier, and my CAB flats are now $4/lb my cost. WTH??

Has anyone used clods with success? They are CAB brand and will be a fraction of the cost. I know that big name restaurants use clods instead of briskets, I just haven't used them yet.

Any input??
 
I'm catering with choice wholes at around $2 a pound. Have a meeting Monday to lock some prices in!
 
Isn't the clod the whole shoulder muscle? That would end up more like pulled beef, which is good. Not brisket though. May be time to move away from CAB Shane.
 
Choice packers are $2.19/lb. Clods and Chuck rolls are still higher than that.

Cab flats are for girls that can't cook.

Just sayin.
