How long will you serve? Will this be plate barbecue or sandwiches? 5oz for sandwiches and up to 8oz per person with plate barbecue. If there is other meats I'd go closer to 5oz.

IMO never talk hunks of meat like how many butts, how many packers ETC. You have to think portions and size of portions like HBMTM says. And he is pretty much spot on on his suggested portions sizes.

200/3 (5.3oz. Ea.) = 67 Lbs cooked @ 50% loss = 134 Lbs raw
/ 8.5Lbs average per butt
= 16 to 17 butts...
