Costco brings it around this time of year and I love it. Remember paying $4 to $5/lb but I guess it's not a fan favorite anymore so they dropped the price down to $2.99/lb. :clap2:

Seasoned it with salt, pepper, chili powder, oregano and onions. Let 'em sit for few hours and put 'em on skewers

Curious, why didn't you cook on the direct side of the firebox?
 
They are really good. Did one last week on the SmokeFire...the whole rack, not cut into chops. Did a nice long brine, smokeboost to 135, and sear to crust up. Really moist and tasty.
