we are competing in BBQ'loo & Blues Too on 07/20 - 07/21 in Waterloo, IA we signed up for sides and dessert. since on there information says nothing about it. but what kinda turns do you do as in are in the regular styrofoam containers? do we supply some kinda dish? thought i would ask here as i am sure there are a few who have done this comp or type of turn in. thanks for any info.




 
The best answer just might be from an email to the organizer.

These ancillary events are "all over the place" on rules.
The organizer would be the expert.

Maybe you will get a response from someone who has done that contest and they can provide the best information. Generally these are anything goes (at least for dessert) as in any kind of container you want. Someone even hired a marching band to escort their dessert at the Royal one time. The organizers will usually provide regular containers for dessert but if it is anything goes I would recommend something better. An example of this is The Slabs presentation for a Pork Loin (non KCBS anything goes) category. It would be hard to compete with this with just a styrofoam containers.

I know this because we have used the styrofoam in the past because we were not sure what the rules were before hand and never placed and have usually been in the bottom half. Just my .02 I would also recommend emailing the organizer ahead of time.

welp i ended up calling them desert and side dish is anything goes they said last year some folks just obught cheese cake from the grocery store and turned it in as is. absolutely no rules for either. so i am still gonna cook up my secret recipe side dish will go out this weekend and get a nice dish for tuen in. wife no clue what she will do with dessert.
 
Last year they were all over the place for sides. Beans were the prevelent entry. It ranged from six crystal dishes with really meaty baked beans to someone that poured some warmed up canned pork & beans into a 9x9 container. Also,had some shrimp dishes, sausage snacks,appetizers etc.
Now the desserts were a whole nother matter. One of our entries was a multiple layered mousse/whipped cream deal in a huge glass snifter that just knocked our socks off. Lot of strawbwerry dishes, and at 100 deg outside, a peach ice cream that was sooo cold it gave us a headache!!
They had to have used dry ice or liquid nitrogen to keep it froze.
After knockin down the four meat catagories it takes a real glutton for punishment to hit those desserts. I noticed a whole lot of 9's at our table.
Go for the WOW factor.

P.S. They put the dishes on a table after judging and you are responsible to fetch them after wards if you want them back.
