My water cooker build..
So I saw one of Jacks Old South Cookers in action and it sure burned through to fuel to keep it to temp. So I made one with 1" of insulation. I did a cook on it and was amazed at how solid it kept the temp and how efficient it burned. On the inside I used 3/16th inch steel.. and skinned it with 1/8th inch.... Its about 1200 pounds and holds 8 gallons of water in the water tray. Need to finish a few items on it then paint.

I think the lid is about 50 pounds... if not more... But I figure it helps me to not peak

That is AWESOME! I actually saw one of the JOS cookers live for the first time a month ago and loved the design, but wondered about the effeciency as well. I started out my desing to be something of an insulated clone as well, but it has taken on a bit of a life of its own.
a few quesitions: 1. what are the dimensions? 2. is the water pan directly below the lower rack? 3. can you show some detail of the water pan? how its mounted, the spacing around it to allow the smoke enter, etc? 4. how much charcoal will the basket hold? Thanks!

hey thanks for all the comments guys.. I appreciate it... ceedubya the basket will hold3 20 pound bags of charcoal with no problems ... and can prolly put in another bag...
Here are a couple pics I took of the water pan and the underside of the pan... the overall dimensions are 48" wide 24" deep and 48" tall.... thats the outside.. beeing insulated with 1" rockwool the inside dimensions are of course 2" shorter all around... The water pan is 3 inches tall and about 42" long and 18 inches wide.. if I remember right... I know it holds right at 8 gallons. I cooked yesterday and did ribs in 3 hours at 300 degrees... a 9 pound pork butt hit 192 internal in 5.5 hours and the chicken was done in one hour... during the 5.5 hours I cooked I added a total of 20 gallons in 5 gallons increments about every 1.25 hours....the temp held rock solid at 300. I chose to use charcoal this time and went through about 1.5 20 poound bags of if during the cook. Anyway if you have any more questions please feel free to ask.. thanks for folling
