Default First Smoke on my new WSM 18.5 - Scribs!

Just got my new WSM 18.5 Tuesday! So for my first cook I decided to smoke a rack of ribs! I rubbed them in cheap pork rub I got at the commissary just before I put em on the smoker. For the smoker I added approx 50-75 coals, 3 chunks of some apple chunks I bought at a local japanese homecenter. Then I poured a small bottle of Apple Juice in the water pan. After that I put 6 lit coals on there to get the heat going! Once the temp hit about 190 I threw the rack on. Once it his 225 I closed all 3 bottom vents to about 1/8". Left the house, came back 4 hours later and the temp was still at 250! AMAZING!!!

Here they are! They came out pretty good and the taste was pretty delicious!
