came across this recipe for Japanese Mayo.....wondering if anyone's tried it and if worth making? Sounds like a lotta whiskin' to me..i'd probably opt for a blender.

Japanese Style Mayonnaise

Ingredients

2 Large Egg Yolks
2 Tbsp Rice Vinegar
1 ½ tsp Sugar
1 ½ Cup Vegetable or Olive Oil
Sea Salt to taste

Method

Rinse a mixing bowl with hot water and dry it well. Place the 2 egg yolks, vinegar, sugar, and a little salt in the bowl and beat the mixture with a whisk until very well blended. Add 1/2 cup (125 ml) of the oil drop by drop, beating constantly. Continuing to beat, add the rest of the oil in a thin stream, being careful to incorporate all the oil to form emulsion. When all the oil has been absorbed, season the mayonnaise to taste with salt.

Google Kewpie Mayo, that's the most popular brand. It's a lot different than "our" mayo and has a variety of used.

Looks good , add a small amount of Japanese karashi mustard , and you will be in the grove...

Japanese mayo has a very umami flavor to it. Although in the US people use it like regular mayo, in Japan it has a variety of other uses. You'll find it spread on everything. Add karashi mustard will not give you "Japanese mayo" and will completely destroy the umami flavors.

You might have something tasty, but it won't be japanese mayo.
