I'd probably give it a go. I love gelantonous (sp?) parts.

Then again I'd eat most of the pig - brains, intestines, liver, spleen, kidneys, balls etc. The only thing I'm not a fan of, and yes I haven't tried, are the eyeballs.

My FiL worked at a meat packing/processing company for many years. He said the only thing wasted on a pig is the squeal.

I couldn't eat that.

You need to put a pair of black olives on TOP of the bun held in place with with toothpics -- to serve as the eyes.. That way it looks at ya while you're eating pig boogers..

Needless to say.. I'll PASS!

When I was a kid there was a diner that offered snout and kraut sandwiches. We never went in so I never got to see one but I will always remember that sign and wonder what that was like.
