Need a great beer batter recipe

In a couple of hours a buddy of mine is dropping off 10lbs of jumbo shrimp he got fresh off the boat in New Orleans.
I was going to just use some tempura batter and panko but the wife asked me if I could beer batter them like the onion rings I made awhile back.
Well Fark me! I can't find the recipe I used last time.
As far as beer go's in the house i have Milwaukee's best (miller light),Reeds apple ale & Blue moon Valencia Grove Amber.
 
Directions:

  1. Sift dry ingredients.
  2. Add water and mix well.
  3. Use to coat fish or chicken filets.
  4. Cover the fish completely.
  5. Deep fry until a nice golden brown.
Replace Water with Miller Light. If your near a store, My favorite is Golden Dipt Beer batter by McCormicks
Its too EZ 1 box of mix & 1 Beer

here's the one I use..

Beer Batter for Shrimp, oysters, mussels and fish.

1 12 oz can of Beer
1 1/2 cups Flour
1/2 tsp Salt
1 1/2 tsp Paprika
1 tsp Pepper
1 tsp garlic powder
2 tsp cilantro flakes (optional)

Sift the flour into a large mixing bowl.
Mix in the salt, pepper, garlic powder, oregano flakes and paprika,
Pour the beer into the mixing bowl, whisking until the batter is light and frothy.
(I use our Kitchen Aid Stand mixer with the whisk..)

Place in the refrigerator for ~ 1 hour to let the spices blend
into the batter, then whisk again until frothy before you use it.

Heat peanut oil in a frying kettle or electric fryer.
Just before it reaches 375F, dip fish in the beer batter,
coating well, and drop them into the hot oil.
Fry until they are golden brown.
Drain on paper towels & serve hot with lemon wedges.
 
Ugggg! Ended drinking too much with my buddy last night:wacko: guy don't usually drink:confused:. So shrimp had to wait till tonight.
It didn't go so well. Made a farkin mess out of my deep fryer. I don't know what I was thinking. Instead of dropping the shrimp in the oil I sat them in the basket.:frusty:

I'm normally the deep fryer king but this was a epic fail!!:sad:
Wife said it tasted great while 16yr old turned on the oven for a frozen pizza because they weren't perfect:sad:
