I have 8lbs of corned beef point that I'm going to try amazingribs Sous-Vide-Que pastrami recipe on. Sous-vide for 36 hours, ice bath to cool down, pastrami rub, then smoke to 130 internal. Excited to give it a shot

Happy Friday to all. I will be smoking 7 lbs of buckboard bacon a 5 lb corned beef flat. Gonna sous vide flat first, then put in fridge overnight, then smoke. Last time I did 36 hours at 150. Was a little too crumbly. This time 24 hours. Just getting the cooking/smoking right before I start to brine my own briskets. Have a good weekend.

I hadn't planned on smoking anything this weekend...

But...


I snagged a 3.5lb Cowboy Ribeye for my son and I while I was running errands this morning!

Always wanted to so I finally pulled the trigger!


$9.48/lb in Southeast Ohio. Not great, not the worst!


I'm excited!

Gonna throw some chucks in for pulled beef sandwiches. Malcom Reed recipe. Also going to make a 4 cheese smoked mac n cheese. Made that one other time, and we loved it. No idea why I've waited so long to make it again (the first time was almost 2 years ago). If anyone wants the mac n cheese recipe, I'll post it here.

I'm having trouble deciding too. There's a patch of wild onions in the front yard calling my name. Might go for a venison backstrap steak, morels and a few of those onions.

My neighbor is well on his way to mastering the hot & fast brisket cook, so I get to eat OP's bbq this weekend. (Other People's) which is great since I don't have to cook for a change.

Bringing my deployed crew back together for a family dinner tomorrow night.

Homemade pizzas in the UUNI for the kids.

Wings, smoked salmon spread, limoncello cake, and whatever else the gang bring over...

Whew. Thank God it's finally the weekend.

You want some nice chunks of smoking wood for your cabinet? I cut a couple cherry trees today, got a decent pile of 2-4" thick chunks your welcome to it.
