Anyone ever done it? I just did! Gimme one or two more times I think I could cook a competition spatchcock on It no problem

My SJ Mini-WSM was created specifically with spatchcock chicken in mind. It's perfect for it.

Tell us a bit more about the mayo on the skin. Although that skin looked busted up pretty bad, the concept sounds interesting.

I make a slurry of 1/2 cup of my home made rub and 1/3 cup dukes mayo. Keeps the skin nice and what I call "cuttable" for judges. Since mayo is just seasoned oil and egg whites, it works just like evoo but better. Yeah that chicken was busted up because I flipped it and it was sticking to the grate. This is what my usual comp turn ins come out like

My mouth is watering brother. I've cooked spatched chicken on my mini WSM but not straight up on the smokey joe like that. Glad to know it can be done.
