We had our first freeze of the year night before last and I had to pick the last of my peppers. Think I will blanch these and put in bottles with vinegar for hot pepper sauce to use on peas and greens

Just blanch and vinegar is all I do. If you don't plan to pull one out and eat it occasionaly, you don't even have to blanch.
