Big Rib Eye Steak
Found this small roast yesterday and decided to share it with the wife as a steak, sort of. Did a reverse sear roasting until the internal was about 110 and then threw the rib eye directly on the coals to finish up the sear. I think i miscalculated the temp rise a litle. Nevertheless, it was delicious.

Love that Cowboy Ribeye. Bought one a couple months ago fram the butcher. It's amazing that they don't look so big in the store but when you get it home looks like a side of beef. Mine was just shy of 3" thick. Grilled it and pulled it, cut into it and it was still rare in the middle. Through it back on the grill for a few more minutes and it was the best medium rare steak I think I have ever done. I was just thinking about getting some steaks this afternoon after work for tonight. Your post just sealed the deal. Thanks for the post and pron.
