Default Stuffed & Rolled Pork Butt w/Pics

Thanks to all who helped me with the stuffing ideas!

I ended up with a Wildrice, Jasmine rice, w/Shiitake mushroom stuffing.
I got a couple of butts from Costco...you know how it comes as a "glob" of meat... I trimmed it out the best I could...made stuffing, layered, and tied it up. It was a mess after I tied it, but it came out very tender, and was the hit of the Thanksgiving potluck...sorry turkey! Cooked at 250* for about 6 hrs, on the 22" WSM with Guava wood...

WTH does one get guava wood...
OH...NVM

really pretty, how did the mushrooms turn out?
seems to me the smoke would bury the flavor.

Beautiful. I wouldn't have considered rolling one either, but I'd definitely consider it now.
