That is a superb smoke ring you got on those bones. I know it doesn't add to the flavor, but it sure makes them look nice.

Can I ask you the cook times and temp?

If I recall I went pretty casual with this cook. Temps between 275-300. 2-3 hours until color and surface where to my satisfaction. Then, I foiled for another 1-2 hours until they felt perfect.
