Sensor Grommets
Just finished my first UDS build and am curious what the thoughts are on grommets to feed your sensor probes through the UDS? Is there one that surpasses all others? Do these seal up tight against the probe cable? Any issue with loss of air, if it escapes? Thanks for any help.

I also took an apple corer and punched a disk out of silicone pot holder and it fits perfectly in the connector to stop air leaks and cushion your probes.

Get a rubber flexible fridge magnet. Slice it halfway through and slide it over the external opening after you have put in your probe. Maybe not pretty, but works 100% efficient.

I like the idea of cutting a "U" along top so when I pull the meat out the probe wire comes with it but haven't thought of a good way to seal it... Yet. for now I just have steel tube with collars on it... like the stoker grouments

temps are too low to be an issue. if you feel it is a concern you could install it then paint w/ a high temp paint. but run a hot enough fire to cure paint. i am planning on addding this to my uds, but i wont paint them.

Fine for you UDS aficionados but what about us stickburners? I am jonesing for an ET-732 but I don't relish punching holes through the quarter inch plus steel plate that my offset is made out of and the lid on the thing is so heavy that I am sure it would destroy the leads if I just run them under the edge. Since the exhaust is located at bottom grate height, I made a hanger for the stack so I can stick my old Polder probe in the smoke and that works pretty well (reads about 30 degrees lower than the dial thermometer near the top) but I would like to be able to have another probe in the meat. The door doesn't leak any smoke during cooking, so I assume it would put a pretty serious crimp in a probe lead.

Here is what I used on mine. It is about halfway down the page and called BBQ Sensor Grommets:

I'll admit that the wires run through a proper grommet looks cool but as far as functionality goes, I just run my wires through a drilled hole in my UDS and the little bit of air leak is not noticeable in the least. NOTHING CHANGED AFTER DRILLING THE HOLE. Absolutely nothing at all.

It won't be anywhere near a flame to offgas. If your worried though go get some muriatic acid from Lowes, HD and soak the part for about 3 minutes, rinse very well and use. Or just hit it with a weed burner or throw it in a fire and burn the zinc off.

I will try to explain this as best I can, but not being a plumber some of my terminology might be wrong, Here is what I did. I drilled a 3/4" hole a little above grill level and threaded a 1/2" copper pipe adapter that has 3/4" threads on one side and a 1/2" female slip fitting on the other. I the cut a 2" piece of 1/2" copper pipe and inserted it into the fitting. Then I took a 1/2" end cap and drilled a hole just a tad over the probe size. Around 1/8th I guess. I inserted the probe thru the cap, then packed the cap half full of string. Now the probe wires slide thru the cap but here are no air leaks. The cap stays around the probes wire all the time. You insert the probe thru the 1/2" pipe and thru the female end of the adapter into the UDS. Place the cap on the end of the pipe and insert the pipe into the adapter. Voila airtight seal. I know it sounds complicated, but the whole operation takes less than 10 seconds. I will try to post pictures later today
