a simple chicken, andouille & oyster gumbo

Looks Great!!
I like the idea of adding the filé per bowl. Some of my friends and guests don't understand the gumbo thing and never thought about adding filé at the table...:doh:

If Bluesman and cameraman don't not finish it all I'll have some too!:hungry:
 
the best tip i can give is, keep the heat low and stir constantly in the your most evenly heating pan. my mom actually makes her roux in a microwave, but i've never tried it myself.

Just like good bbq....low and slow
And stirred quite a bit
