Well, I had a lot of puled chicken left over, and my wife has the flu, so I thought some chicken soup would be a good idea. I went to the market and picked up some veggies.

A quick slice and dice.

The carrot greens made a good substitute for parsley.

Sauteed in a large stock pot.

Chicken stock added as soon as the veggies are a little tender.

In goes the pulled chicken and everything simmers for about 90 minutes.

Wow, I never make soup but that right there just jumped to the top of my todo list.
 
My family would love that! My wife would add some rice to it also. That should definately make her feel better!
