Just thought I'd try these

the makings (the center one if JD maple)


ready for smoke sprinkled with JT'S SMOKIN' BBQ test rub


And on the UDS with RO lump and some hickory chunks


I will post the finished results later.

Great job. Cooling them in the fridge prior to slicing helps too. And believe it or not they are great cold.

Wow, those look great. I can't believe I've never tried making 'dillo eggs. I always go straight to ABTs but I'm going to try that out this weekend.
