Nellie found some nice chops while cleaning out the freezer
Seasoned up with some “Doziers” rub (thank you Sleebus.jones). Decided to have one of Nellies Jamaican “Ponche Crème” with a floater.

I had some thin cut chops tonight with biscuits, but they didn't turn out like that. Those look great! Nicely done.
 
Excellent lookin’ chops. The only problem that I see is that I usually eat 2 myself. What are you and Nellie gonna to eat?

Ok, you asked for it Doug, my form of translation of Nellies recipe (it is written in Jamaican).

8 cans condensed milk
3 cans evaporated milk
6 eggs
1 1/2 bottles 750 ml dark rum (no overproof)
1 lime peel
1/2 T cinnamon
1/2 T grated nutmeg
3-4 dashes Angostura Bitters

1. Crack eggs one at a time removing the white spot's(What Nellie calls the eyes)
2. Peel lime and add to eggs
Whisk eggs until frothy using a hand mixer on low or a hand held whisk
3. Slowly pour in condensed milk whisking vigorously. Add evaporated milk and all the rum.
4. Add freshly grated nutmeg and cinnamon and mix thoroughly
5. Strain mixture thru a fine colander
6. Put in old bottles until ready for use
