Default First attempt at BBQ ribs on UDS..

Here they are rubbed down and ready for UDS. IF they turn out allright I'll show after Pron. ;)

OK, these turned out awesome! (baby back ribs) Nice smokey flavor, with a little tug, they pulled clean from the bone. My wife said 'these are the best ribs I've ever had'. Granted, we do not have BBQ ribs that often, but it still made me feel good.

One thing though, they didn't expose bone as they cooked, why?

Here's a shot after done..

I've had them before when the bone didn't stick out after they were ready. I think it's a general guideline. They look really good. You're on the fast path, dude.

I think the reason that the ribs didn't show bone was just time. I'd guess another hour to 90 mins you'd see the retreat of the water. :-)

Moist ribs ain't always a bad thing.

One of the racks seemed to be a bit dryer than the other. The thicker side of the moist rack had a darker inside color surrounded by a light tan, then the redish bark color. The dryer rack did not have this dark inside colr. Both tasted great though and seemed to pull away from the bone the same. These were on for over 4 hours at about 225-230..
