Default Labor Day Butts and Chicken w/Heavy Pron

My boss hired me to cook pulled pork and pulled chicken for his saturday cookout for about 75 people. It was a huge success, and I got some hits on additional gigs too! I cooked 8 butts in my 2 WSMs over hickory and apple wood. I cooked the chicken in my Chargriller Smokin' Pro over oak and apple. Here are a few pics of the results.

The team at work...

8 Butts, about 65 pounds of pork...

Now the chicken, these are boneless, skinless thighs...

Man, that looks Great! Those butts look like they were not packed in a solution. Did you inject them?

Nope, no solution they were fresh IBPs, excellent quality! And I did not inject either. I cooked them for 13 hours straight through without foiling. They were moist and tasty! Some of my best butts so far. :)
