Default not your mom's Mac N Cheese

Made some "alpine mac n cheese" from a recipe in "Cuisine at Home" magazine. I've always found "regular" mac n cheese kinda boring but this stuff rocks! Cheese sauce included some worcestshire sauce, dijon mustard, shredded smoked gouda cheese and Appenzeller cheese (Appenzeller cheese is a hard cow's-milk cheese produced in the Appenzell region of northeast Switzerland.) as well as sauteed shallots. Original recipe called for adding sliced Kielbasa but all I had on hand was some Andouille, so I used that. Topped with a mixture of fresh rye bread crumbs, minced parsley and melted butter.

As a side note, I went to the grocery for some more Parchment paper which I use to line my dutch oven when baking bread. I discovered a product by Reynold's that has foil on one side and parchment on the other. I used it to, not only line my dutch oven for bread, but lined baking dish for mac n cheese. This stuff is great! Nothing stuck to it and no clean up!

Great looking macs n cheese. Lovin' the parchment/foil. I use parchment paper for a lot of things, but I've never seen the foil backed stuff before. I'll have to look for it. Thanks!
