The menu was Beer Can Chicken, Moink Balls & Tater Skins. Once the prep was done I had the guts of 4 large potatoes sitting in a bowl. Couldn't let them go to waste. I mashed them, added a chopped Jalapeño, Garlic, Ranch Dressing & an egg. Balled them up & placed on the smoker until golden brown. Now i need a name for them. Please help! I was thinking Jalapeño Spud Balls.

That all looks super. Nice color on the bird. The potato ball thingys sound good too.

Everything looks great! I like the Jalapeno Balls. How about calling them ABNs (Atomic Buffalo 'Nads) :shock: :-D
 
One option I will try next time is adding about a cup of shredded cheese.

The Recipe (to please the fiance I actually wrote it down as I went along):

Ingredients:
3 large Baking Potatoes
1 medium Jalapeño, chopped
3 tsp chopped Garlic
¼ cup creamy Ranch Salad Dressing
1 egg, beaten
½ cup Italian Bread Crumbs
3 tsp EVOO

Preparation:
1. Bake potatoes until tender.
2. Scoop out the Potato. If you plan to make Potato Skins leave about ¼” on the skins.
3. Mash the potato getting rid of most of the lumps.
4. Fold in the remaining ingredients.
5. Roll into approximately 1” to 1½”balls (no larger than a golf ball).
6. Place balls onto Parchment paper in a 225-250 degree smoker.
7. Cook approximately 2 hours or until Golden Brown.
 
Nice looking meal you have there !! Like the jalepeno spuds too.
One pepper for that whole plateful seems mild?? Will give them a try for sure.
 
I made note of the receipe also. I was thinking Jalapeno Pappas Hevos...
(??Spelling??) Pappas means taters and Hevos mean eggs and is the common spanish venacular for "balls" ... Ya gotta remember that Arizona is really northern Mexico if ya look at the demographics... (Don't even get me started on border security issues.)
