Default Smoked Beef Chuck on Beer Bread

I seasoned beef chuck roast with dry rub, added beef stock and onions..
Smoked in Big Poppa UDS




made beer bread...

3 cups self rising flour
pinch of salt
1/4 cup of sugar
one beer



brushed with butter and added sesame seeds..







made smokey cheese disc with blended cheeses..








split the beer bread..topped with pulled beef..





caramelized onions...



bacon...



smokey cheese disc...



lettuce and tomato...



slathered the lid with horseradish sauce...



Pulled beef on beer bread sandwich.










It was pretty tasty!

You had me at Beef on Beer bread then you slayed me with bacon & smoked cheese.... I think I had a Foodgasm Fat tire is some great Beer too!

Thanks everybody!!
I'm trying to edit the post but my puter is giving me trouble.
Wanted to add...
When the stock was absorbed, I added more stock and foiled the chuck until tender.
Also, I couldn't get the bread as dark as I like in the drum so when it was finished baking, I set it under the broiler to brown the top.

Thank you John! The chuck took about 6 hours. It wasn't a huge hunka meat. I just pulled it off the heat and let it rest a bit before using.
