Yep, one of my griddle favorites and those really do look great.
FYI, we did fajitas on the griddle last night using inside skirt steak, found a local Mexican grocery/restaurant that thin cuts it daily for their fajitas in the restaurant but they also sell it in their grocery store. I think this is gonna be my go to for thin sliced "griddle" steak; lots of fat to render and about 1/2 the cost of ribeye or sirloin.
