I bought a pack of Carne Asada meat ( either chopped flank or sirloin - didn't say) and found thin cut sirloin. Cavanders Greek Seasoning n Olive Oil. Provolone AND Pepper Jack cheese. French Bread. This did NOT SUCK.!.

Yep, one of my griddle favorites and those really do look great.

FYI, we did fajitas on the griddle last night using inside skirt steak, found a local Mexican grocery/restaurant that thin cuts it daily for their fajitas in the restaurant but they also sell it in their grocery store. I think this is gonna be my go to for thin sliced "griddle" steak; lots of fat to render and about 1/2 the cost of ribeye or sirloin.
