They had spareribs on sale at ShopRite for 1.49lb, so thought I'd try one and trim it like a baby back. I should have made 2.

Great lookin spares! That is either a St.Louis cut or a KC cut. Can't remember the difference right now.

Kansas City cut. Not a commonly accepted term, it is usually used to refer to what is otherwise known as a St. Louis cut. Sounds like a little Missouri rivalry to me.

KC claims everything. Kinda like KC strip vs. NY strip.

Some of the trimmings went into beans, some got eaten along the way and the dogs got a few with their dinner.

Lookin good! How did the butt turn out?
The butt was really good. Maybe the best yet. I used some maple wood this time with "southern succor rub" and "southern sop" mop from this post
