To cut down on the sweetness, I would cut the sugar and honey. Keeping the marmalade will give you more orange flavor.

Our go to wing sauce is Patio Daddio's Finger Stickin' Chicken Sauce. In fact it has become a component of our competition sauce.

I'm hooked. I had it with brussel sprouts this past weekend. Can't wait to try it on some collards and stewed cabbage. I've officially joined the dark side.

Rule of 1/3rds.

1/3 cup melted butter (a hair over 1/2 stick)
1/3 cup honey or agave nectar
1/3 cup sriracha

Heat in pyrex measuring cup in micro then stir thoroughly

I toss with smoked crisp skin wings and then put on med-high indirect grill for about 10 minutes to set the sauce. I made the agave version on Sunday for football games and they were the best wings I have had. I like to smoke my wings with apple wood at pretty high heat (350+) with a light Season-All rub.
