I haven't smoked any meat for over two weeks, so I decided to have a breakfast fatty this morning. That meant some prep last night.

I started out by sautéing some minced garlic and onions in butter.

Then I added in some hand-grated some potatoes and browned them to near-perfection.

I scrambled up some eggs to put the "breakfast" into the fatty.

Since we can NEVER have enough bacon, I quickly fried some up to throw into the mix.

After filling the fatty piston (thanks, Cowgirl), I had some raw material left. Not one to waste resources, I sprinkled the remains onto the rolled out Jimmy Dean Maple sausage.

Since this is BBQ, I needed some sauce - even a drizzle goes a long way.

After rolling the contents of the fatty piston into the sausage, I had a nice, stuffed fatty.

Sprinkled with Yardbird, this fatty looks ready for cooking.

And another look to make sure it's ready.

Cut a thick slice and put it on a toasted, buttered English muffin.

And one last longing look at the fatty...

Awesome looking fatty, About how many calories you think?LOL

I have to agree with your wife! I'm really getting tired of looking at pictures of good looking breakfast fatty sandwiches WITHOUT pepper jelly! Geez! :becky:

Nice job on the fatty!

It looks like perfection from here! :thumb:

That looks like an "anytime" fattie to me. Don't just limit it to one meal.

You know, I'm not that far away, you could have called.

Looks like my idea of breakfast in heaven. I was thinking of doing one similar for deer hunting in 2 weeks and you just "pictured" me into it.

She's right...kinda...depends on how many times is "just so many times"...lol! Nice job!
