Default Now that Duck Season is over....what to do now????

Eat some of what we shot of course.....

Cut up duck breast into chunks/strips, marinated, some cream cheese, banana pepper, all wrapped up in some goodness of bacon.

All wrapped up and ready to go on the grill


And away we go....


Just about done


Daughter giving the thumbs up, especially with the secret sauce

Since you didn't invite me to duck hunt with you, I'm not sure what your should do with them. I like duck gumbo, but like it best when it is made with ducks I shot. Since I didn't shoot your ducks, I'm not sure what your should do with them.

I hope you plan better next year.

Um, I have to shoot the ducks before I make the gumbo. If you haven't had duck gumbo, you have missed one of the best ways to eat wild duck.

Back in my high school days, I hunted near Sabine Pass, and was able to shoot as many ducks as I wanted, legally. Did I say that out loud?

We had a place that would process them cheap, and I had good friend with a coonass mom who taught me how to make gumbo. I would bring her my ducks, and she would make up a a giant pot of duck gumbo. Toss them in, and after about eight hours, take some tongs and pick up the duck carcasses, and give them a shake, and all the meat just fell off.

Not gamey at all. Real earthy, but not gamey.

I really liked those cookers.was leaning strongly towards one of the big ones when it all ended.Fat 60 if I remember correctly.I got to see one cookin in Columbus,MS.AWESOME cooker.I'll bet Ole Tuscaloosa Q could replicate it.

C-Dog-I would love to try some duck gumbo. I have always wanted some. I have plenty of duck in the freezer.....

Hoss - Had to make these on the gasser. The DPP Fat 50 is a great smoker.

Those were a mix of gadwall and mallards. Luckily my place attracts mostly dabblers.
